Flan
3/4 cup sugar
2 tablespoons water
1 cup evaporated milk
2/3 cup sweetened condensed milk
1/2 cup coconut milk
4 eggs
2 eggs yolks
1 tablespoon vanilla extract
1/2 teaspoon salt
1/4 cup dried coconut flakes toasted (Spread evenly on a baking sheet and bake in a preheated 350 F)
Preheat the oven to 350 F. In a heavy medium saucepan combine 1/2 cup of the sugar with the water. Boil over high heat until the sugar has turned an amber color, about 5 minutes. Divide the caramelized sugar evenly among 6-once custard cups. Set aside
In a medium sauce pan combine the milks and the remaining 1/4 cup of sugar. Cook over high heat until bubbles form around the sides of the pan.
In a large bowl, whisk the eggs, egg yolks, vanilla, and salt together. Gradually whisk the scalded milk into the egg mixture, without scrambling the eggs. Strain and pour into the custard cups.
Place the cups in a baking dish and fill the baking dish half full with hot water. Sprinkle the coconut on the flans. Cover the baking dish with aluminum foil and bake for 40 to 45 minutes. or until a knife inserted in the center of a flan comes out clean. Let cool in the baking dish.
To serve, run a knife around the inside edge of each custard cup and turn upside down onto a dessert place.
